Pasta Soup

Ingredients

  • 1 onion
  • 1 clove garlic
  • 2 celery stalks
  • 2 carrots
  • 2 tablespoons olive oil
  • 4 small tomatoes
  • 1 28-ounce can crushed tomatoes
  • 1 11-ounce can white beans
  • 6 cups chicken stock
  • 1/2 pound small cut pasta, cooked
  • 1/4 cup Parmesan cheese, grated
  • salt and pepper (to taste)
  • additional Parmesan cheese (to taste)

Directions:

  • Cook the 1/2 pound of pasta and set aside for later in the recipe.
  • Dice the onions, garlic, celery, carrots, and the fresh tomatoes and set aside.
  • Put olive oil into a large pot and heat over a medium temperature.
  • Once the oil is heated, add the onions and cook until they are transparent.
  • Add the garlic, celery, and carrots and cook for 5 minutes, stirring occasionally.
  • Add the fresh tomatoes, crushed tomatoes, white beans, and chicken stock to the pot. Cook over a high heat for 15 minutes, or until the vegetables are tender and the soup has come to a boil.
  • Add the cooked pasta and 1/4 cup of Parmesan cheese and stir.
  • Adjust the salt and pepper to taste. Ladle the soup into bowls and sprinkle any additional Parmesan cheese on top. Enjoy!
