Rainbow Rice Salad

Ingredients

1 onion
1 clove garlic
2 celery stalks
2 carrots
2 tablespoons olive oil
4 small tomatoes
1 28-ounce can crushed tomatoes
1 11-ounce can white beans
6 cups chicken stock
1/2 pound small cut pasta, cooked
1/4 cup Parmesan cheese, grated
salt and pepper (to taste)
additional Parmesan cheese (to taste)

Directions

  • 1. Put the cooked rice and chicken into a large mixing bowl.
  • 2. Add the mozzarella, tomatoes, broccoli, carrots, and corn to the bowl.
  • 3. Remove the basil leaves from the stems. Tear the leaves into small pieces and add them to the bowl.
  • 4. Add the juice of the lemons, the olive oil, and balsamic vinegar to the rice salad, a little at a time, until the desired taste is achieved. Mix the dressing into the salad well.
  • 5. Add salt and pepper to taste and eat!

Serves 4 to 6
